Ingredients
  

  • 4 tbsp Sugar
  • 32 ounce Strawberries
  • 1 tbsp Lemon juice

Optional

  • 2 tbsp Cornstarch (or more if needed)
  • 4 tbsp Water (if you like it a little runny)
  • Lemon zest

Instructions
 

  • To make the strawberry Jam :
    1. Wash the strawberries with cold water, with the stems still on. Removing the stems before washing causes the strawberries to absorb more water. If you already removed the stems, don't worry. Just use less water.
    2. Ensure there are no moldy or mushy berries because they can alter the taste.
    3. Slice the berries however you'd like (this is my favorite part since it doesn’t have to be perfect). This makes it easier to mush them later.
    4. Add the sliced strawberries to the Instant Pot along with 4 tbsp of sugar. Give it a nice mix. Let this mixture sit for 30 minutes on manual mode. The strawberries will start releasing some water, and letting it cook for 30 minutes allows this to evaporate. Make sure to leave the lid off during this process.
    5. Next add the lemon juice and lemon zest (optional). Keep stirring the mix to make sure it doesn’t burn. At this point, you will be tempted to taste it. Go ahead, give it a taste. It's hard not to.
    6. The next step is to lock the lid, seal the valve, and pressure cook for 1 minute on manual mode. After this 1 minute is complete, allow the jam to sit for 15 minutes without removing the lid or releasing the pressure valve (this is called "natural release" in the Instant Pot community).
    7. After 15 minutes of natural release, now flip the valve to release any remaining pressure. This will make your whole house smell like a delicious bakery.
    8. Open the lid carefully (make sure to keep your face away from the pot).
    9. Use a hand blender or a potato masher to get the desired jam texture. I prefer a potato masher and sometimes even use a spoon to fine tune the texture.
    10. Next, press Sauté mode, stir the mixture, and bring to a boil.
    11. If you don't like the consistency and it's too runny for your taste, then you need to make the Thickener. In a separate bowl, add 2 tbsp of Cornstarch and 2 tbsps of water (this is optional, only do this to thicken the jam). Keep in mind, the jam will naturally thicken as it cools down. So you don't want to add too much.
    12. Give the jam a nice mix and add the above thickener as desired.
    13. Simmer for 5 minutes and gently stir to ensure the jam doesn't burn.
    14. At this point, you are officially a jam maker! Once the jam cools to room temperature, you can transfer it into fancy little Mason jars and refrigerate it. You can store it in the fridge for 2-3 months and freeze it for up to 2 years. Hubby and I can put food away so it never lasts us that long.

Do you love strawberry jam? My husband absolutely loves it. I thought it was alright while growing up, but since moving to Florida I've grown to love it too. Florida has an entire festival dedicated to strawberry and blueberry season. How amazing is that? I have been making my own jam and oh man! I am never going back to the store-bought jam.
Go look at your favorite store-bought jam sitting in the refrigerator. Look at the list of ingredients, and count all the preservatives. Well, we can avoid all of that! This 3-ingredient strawberry jam is divine. In 45 mins you can have this super delicious jam at home. You can even make a big batch that lasts more than a year. In our house, it doesn't last more than 2 weeks because we eat it pretty regularly.
Is homemade strawberry jam better than store-bought jam?
What I love about homemade Strawberry Jam is that I know what’s in it!! I love that I have control over which ingredients I use to make my jam. No artificial preservatives, sweeteners, or colors.
I like Jam to be low-sugar, and most of the time I use coconut sugar. That way, I control the amount of sugar I add without compromising the texture or taste. It’s also cost-effective to make jam at home. Once you master the art of jam-making, you can create so many different variations and flavors. The options are endless!
My personal favorites are mango/ghost pepper and pineapple. Yum! My husband loves strawberry, blueberry, and grape. They all turn out amazing with only a few simple tweaks to this recipe! Let me know if y’all want specific recipes for any of these and I shall deliver.
What’s the best time to make strawberry jam?
A fun fact about Florida strawberries is that they actually grow during winter. The growing season lasts from Thanksgiving through March, and you can easily find fresh strawberries brought to the store from the farm. Oh, and the best time to make the jam is any time of the year! 
What's the best way to clean fresh berries? 
On TikTok, a viral video taught us about cleaning berries. If you didn't hear about it, then this is how to clean them: grab a bowl and soak the strawberries in water, add 1 tbsp of salt, and let it sit for 10 minutes. You will literally see bugs will crawl out of them. Don't believe me? Try it yourself. Now if you've been accidentally eating bugs all this time, then the good news is that it's not harmful. You've just been getting extra protein all this time! Haha!
What's the best way to preserve fresh strawberries? 
Since the turnaround time for berries is fast, the best way to keep strawberries from rotting is to leave them unwashed when you first buy them. You can even leave them in the store-bought container. Humidity is not good for berries, so keep them refrigerated and only wash them right before you're about to chow down.
